Solo Italiano presents authentic Italian cuisine, fresh from the farm and the sea, prepared from the heart, by the winner of both the 2003 Best Young Chef in Italy and winner of the 2008 Pesto World Championship. Executive chef Paolo Laboa hails from Genoa and has cooked on both American coasts for more than ten years. He is firmly in command of his kitchen, creating Italian fare whose ingredients are primarily local. He says, “Cooking is what I love and I want each ingredient to sing. Simplicity is my goal. If there are five ingredients, I want you to taste all five of them.” Breads and pastas are all made in-house from scratch using traditional Genovese recipes.
